When the caravans traveled along the silk road  to China and pursue their wealth from the business transactions on the ancient trade routes,they never forgot to take a chance to taste various delicious local foods as well in different cities. Follow the trail of Silk Road in China, tourists have chance to enjoy the special dishes of Shaanxi cuisine, Gansu cuisine and Xinjiang cuisine.   


Shaanxi Cuisine & Xi'an Food
Shaanxi Cuisine, also known as Qin Cuisine, is the representative culinary achievement in the northwest of China. The famous food in Xi'an as below:

Yang Rou Pao Mo
It is one of the signature dishes of the area; It consists of a piece of thick,chewy bread and a kettle of mutton soup with starch noodles.

Biang Biang Mian
It can be a local specialty noodle dish which is extremely good. The wide noodles are spiced, have a broth and include toppings such as eggs, tomatoes, beef,etc.

Rou Jia Mo
It is just like a beefburger. This is a local tradition and should be very easy to taste. Sandwich-like, with pork, beef or lamb, this is a must-try item for anyone who come to this area.

Dumplings (Jiaozi) Feast
Xi’an is one of the birthplace of the great tradition of eating dumpling. It was here that the art of creating the most tasty and delicate dumplings was refined at a dinner. This is an experience for the dumpling connoisseur who will be tempted by the flavours, shapes and colours, meanwhile the elegant names and stories attached to each variety are truly amazing.


Gansu Cuisine & Food in Lanzhou, Dunhuang
Lanzhou dishes are representative of Gansu cuisine which features the roasting,steaming and braising of beef and mutton; Dunhuang is located in northwest of China and bordering Xinjiang Province, Dunhuang cuisine is influenced much by the nomads,among which grilled Mutton being the most popular dish in both restaurants and hotels in this vibrant city.

Lanzhou Beef Noodles
The most popular local dish - pulled noodles are usually served in a beef soup.The noodles are always hand made and can be pulled into different shape and size; In the wheat flour one kind of special ash from burned plant in the desert is normally mixed, which make the noodles more flexable and a little alkaline.

Boiled Mutton or Lamb
In Gansu, the motton can be the top dish which the hospitable Dongxiang ethnic minority uses to entertain important guests. It is also a must on the menu of feast during the festivals.
 
Camel Hoof
A special dish, also known as Camel Hoof on snowmountain, gained its name forthe shape that is like camel prints on the snowmountain. Camel Hoof is actually tendons with much more nutrition.

Stir-fried Hump with Five Shredding
A traditional Dunhuang dish, was a favorite of high-ranking imperial concubine Yang Yuhuan of the Tang Dynasty (618-907). The primary ingredient is Camel hump, accompanied with five shredding consisting of Yulan (dryed bamboo shoot),Dongru (a type of mushroom), leek shoots, ham and chicken breast. It is mainly featured in fat and soft meat.

Quick-frying Hump
Cut the Camel hump into regular pieces or shredding and cook them by quick-fry method. The finished fresh, soft and tasteful Quick-frying Hump will be well flavored with seasonings.  

Roast whole lamb

This can be a big dish for over 5 people to share. The lamb will be chosen and roasted by fruitwood in the traditional kiln. The whole roast lamb will be offered with mutton entrails soup,special bread and cold vegetables as well.


Xinjiang Cuisine & Food in Turpan,Urumqi and Kashgar
Many delicious foods are very popular in Xinjiang ,such as fresh naan bread,spicy kababs, steaming pilaf, famous hand stretched noodles and much a variety of choices.  

Urumuqi Dapan Ji( Big dish of chicken)
A famous Hui dish (literally "Big Dish of Chicken"). It is cooked by stewed chicken with potatoes,onion and starch noodles. A side of noodles from wheat flour can be served as well.

Xinjiang Crusty Pancake
It is a type of round unleavened bread topped with sesame,which is similar to South and Central Asia naan.

Xinjiang Barbecued Mutton (Kao Yangrou)
It tends to be less spicy with a wide variety of fat breads (bing) that can be sweet, salty or plain.

Latiaozi( Fresh Noodles)
It is served with fried boiled lamb, tomatoes, eggplants and hot green peppers.

Lamb Skewer (Kebabs)
Xinjiang lamb skewers are marinated with cumin and liberally sprinkled withchilli, garlic and Szechuan peppercorns. The incredibly fragrant and very,very good bar snack.

Xinjiang Grilled Fish (Roast Fish Kebabs )
An traditional Uygur way to grill fishes which are pierced with long sticks andvput in a circle around the fire, always rise up tourists taste. Grilled fish isthe classical flavor of Kashgar snacks, especially the most famous in Bachu County; The roast fishes are good materials to make a tender and not fishy,crispy and delicious, distinctive dish. 

Local Fruits
Both Xinjiang and Gansu province  a variety of fruits and melons in summer and autumn seasons. Especially the melons are of 50 species and Hami melon is thetypical one:     
Apricots (xingzi), plums (meizi) and mulberries (sangzi) in June;
Melons (gua) in July; peaches (taozi), figs (wuhuaguo) and grapes (putao) in August;
Pomegranates (shiliu), apples (pingguo) and pears (lizi) in September.
